Ingredients (10)

400.00 ml coconut milk — tinned
300.00 ml water
1.00 stock — chicken or vegetable
1.00 lemongrass — chopped
5.00 lemon leaves
30.00 ml fresh coriander — chopped
1.00 red chilli — deseeded and chopped
150.00 g turkey — cooked, finely chopped
0.00 sea salt and freshly ground black pepper
0.00 fresh chillies — coriander and lemon wedges, to serve

Method:

Slowly bring the coconut milk, water and stock cube to the boil.
Place the lemongrass, lemon leaves, coriander and chilli in a bowl and add the boiling coconut mixture.
Stand for at least one hour, preferably overnight.
Strain the mixture through a sieve and bring the liquid to the boil once more.
Add the turkey and simmer for a few minutes until heated through.
Season to taste with salt and pepper and serve with chillies, coriander leaves and lemon wedges.
