Thai soup

Ingredients

  • 400
    ml
    can of coconut milk
  • 300
    ml
    water
  • 1
    chicken or vegetable stock cube
  • 1
    x 5 cm piece lemongrass, roughly chopped
  • 5
    lemon leaves
  • 30
    ml
    freshly chopped coriander
  • 1
    red chilli, seeded and chopped
  • 150
    g
    leftover cooked turkey, finely chopped
  • salt and freshly ground black pepper
  • chillies, coriander leaves and lemon wedges for serving
 

Method

10 minutes
 
Slowly bring the coconut milk, water and stock cube to the boil.
Place the lemongrass, lemon leaves, coriander and chilli in a bowl and add the boiling coconut mixture.
Stand for at least one hour, preferably overnight.
Strain the mixture through a sieve and bring the liquid to the boil once more.
Add the turkey and simmer for a few minutes until heated through.
Season to taste with salt and pepper and serve with chillies, coriander leaves and lemon wedges.
