Thai pork meatballs

Ingredients

    kg
    pork mince
  • 4
    c
    cloves garlic
  • 1
    small red chilli
  • 1
    large onion
  • 1
    big handful fresh coriander – finely chopped
  • 1
    whole spring onion – chopped
  • 60
    ml
    freshly grated ginger
  • 40 - 60
    ml
    soy sauce
  • Zest and juice of 2 limes
  • 10
    ml
    brown sugar
  • 4
    sticks lemon grass
  • oil for cooking the meatballs
 

Method

Place the ginger, garlic and onion and chili in your food processor and process until everything is finely chopped up. Add this mixture as well as all the other ingredients to the pork mince in a mixing bowl. 

Mix well and form 16 small pork meatballs. Cut each lemon stick of lemongrass in 4 and use as kebab stick for the meatballs.

Heat some oil in a pan or heat the griddle pan and cook the meatballs until cooked and caramelised.

Serve with sweet ‘n sour chilli sauce or plum sauce and fresh coriander.
