Thai noodle soup

  • sesame oil
  • 2
    baby marrows
  • 5
    ml
    minced ginger
  • 5
    ml
    chopped lemon grass
  • 3
    ml
    minced chilli
  • 1
    fat clove garlic
  • 750
    ml
    water
  • 30
    ml
    soy sauce
  • 30
    ml
    fish sauce
  • 1
    sachet of noodle seasoning (optional) - beware the MSG
  • 75
    g
    instant noodles
  • 6
    spinach leaves
  • small handful fresh coriander or basil (optional)
 

Method

 
Heat about one teaspoon sesame oil and stir-fry baby marrow, ginger, lemon grass, chilli and garlic (or use 2 ml minced garlic), for a minute or two.
Add all liquid and seasoning sachet.
Bring to the boil and cook for about three to four minutes, until vegetables are just cooked.
Add noodles and spinach and cook, stirring frequently until noodles are cooked through, about four minutes.
Stir in herbs, adjust seasoning and pig out!
