Thai fried noodles

    spring onions, thickly chopped

    celery stalks, sliced
  • 12
    prawns, cooked and peeled

    fish sauce
  • 15
    ml
    soy sauce
  • 15
    ml
    oyster sauce
  • 25
    ml
    chopped fresh coriander (optional)
  • 10
    ml
    tamarind, soaked in water (optional)
  • 30
    ml
    chopped peanuts
 

Method

 
Soak dried rice sticks in cold water for 20 minutes. Drain and dry. Heat oil in a wok or heavy-based saucepan, break in egg and mix roughly. Add rice sticks and all remaining ingredients and stir-fry for 3 to 5 minutes. They will be 'bouncy' when ready. Decorate with fresh coriander.
