Thai dressing for vegetables

  • 2
    cloves garlic, peeled and sliced
  • 2
    kaffir lime leaves, shredded finely
  • 1
    red chilli, finely sliced
  • 45
    ml
    oyster sauce
  • 30
    ml
    olive oil
  • chopped peanuts
  • 400
    g
    green beans, cooked al dente
 

Method

 
Heat oil in a small saucepan. Add garlic, lime leaves and chilli and heat for 30 seconds. Remove from the heat. Mix half the oyster sauce with 45 ml water and whisk into oil. Taste and add more oyster sauce if desired. Strain through a sieve and pour over warm beans immediately, Scatter with chopped peanuts and serve warm or at room temperature.
