Thai chicken salad

  • SALAD DRESSING
  • 50
    ml
    apple cider vinegar
  • 100
    ml
    olive oil
  • 25
    ml
    sesame oil
  • 20
    ml
    soy sauce
  • 5
    ml
    soft brown sugar
  • 10
    ml
    fresh ginger, grated.
  • 2
    ml
    dried chillies, seeded and finely chopped
  • 10
    ml
    unsalted peanuts, slightly chopped
  • LETTUCE
  • 1
    chicken breast fillet, grilled or fried
  • small lettuce, coarsely shredded
  • small red cabbage finely shredded
  • 4
    onion rings
  • 1
    small to medium carrot, grated
  • handful bean sprouts
  • 1
    spring onion, finely chopped
  • 10
    ml
    sesame seeds
 

Method

 
Blend all the ingredients for the salad dressing in a food processor or blender until smooth. Chill until seeded.
Chill the chicken fillet slightly before cutting into cubes. Mix with the remaining salad ingredients in a mixing bowl.
Moisten with the salad dressing and serve as a light meal.
