Ingredients (9)

30.00 ml thai spice mix
4.00 chicken breast fillets — bone in
0.00 oil
4.00 bread — hamburger rolls
0.00 butter — or margarine
30.00 ml sweet chilli sauce
45.00 ml coconut milk
0.00 cucumber
0.00 mixed bean sprouts — to garnish

Method:

Rub the spice into the chicken breasts and fry in a little heated oil in a griddle pan until just done and still juicy.
Halve the rolls but don’t slice them all the way through.
Spread with butter or margarine if desired.
Place a chicken breast inside each roll.
Blend the chilli sauce and coconut milk and spoon a little of the mixture over each chicken breast.
Slice the cucumber into thin strips using a potato peeler and stack on top of the meat.
Garnish with bean sprouts.
