Ingredients (7)

4.00 turkey — tenderloin
125.00 ml teriyaki sauce
65.00 ml stock — chicken
1.00 garlic — cloves, crushed
15.00 ml fresh ginger — grated
7.00 ml olive oil — or peanut oil
0.00 fresh coriander — to serve

Method:

Mix teriyaki sauce, stock, garlic and ginger together.
Season with pepper.
Marinate strips of turkey (buy the punnets marked tenderloin) in teriyaki sauce mixture for about 30 minutes.
Heat oil in a pan.
Remove turkey from marinade and add to pan.
Cook until done (about eight minutes).
Remove from pan and keep warm.
Pour teriyaki marinade into the pan, bring to the boil and cook to thicken slightly.
Serve drizzled with sauce.

SERVING SUGGESTIONS
Toss strips of tenderloin with noodles and stir-fry with your favourite sauce.
For a cool, Asian-style turkey salad, toss cooked turkey cubes in cooked noodles; cool, and add a sesame-based soya dressing, lots of fresh herbs and blanched vegetables.
For a delicious turkey sandwich: slice cooked turkey and toss with yoghurt and lemon juice, spring onions, celery and a dash of mustard.
Serve on rye bread.
