Tender beef fillet with pesto cream

  • 1.2
    kg
    trimmed beef fillet (allow 200g per person)
  • 30
    ml
    olive oil
  • 30
    ml
    soya sauce
  • 75
    ml
    fresh cream
  • 150
    ml
    good-quality basil pesto
 

Method

Preheat oven to 180°C.

Pour the oil and soya sauce over the fillet. Season generously with black pepper and leave to stand for approximately 30 minutes.

Sear the fillet quickly in a hot pan to seal and brown it.

Transfer the fillet to a roasting tin and bake in a preheated oven for 20 minutes per kilogram for medium-rare or 24 minutes when following this recipe.

Remove from the oven and set aside to rest for five minutes.

Mix the pan juices with the cream and pesto and heat. Slice the fillet and serve with the pesto sauce.
