Ten minute doughnuts

  • 250
    ml
    self-raising flour
  • 30
    ml
    sugar
  • 1
    large egg
  • 125
    ml
    milk
  • pinch of salt
  • cooking oil
  • castor sugar to coat
  • apricot jam
 

Method

 
1. Place all ingredients in a mixing bowl and blend until mixture is smooth and fairly thick. 2. Heat oil in a frying pan (the oil should be about 1,5 cm deep). Don't allow the oil to get too hot. 3. Drop dessertspoonfuls of the mixture into the oil one at a time. Turn when the bottom of the doughnut is golden brown and bubbles start breaking through the batter. 4. Remove when uniformly brown and immediately toss in castor sugar to coat. Split doughnut when cool and fill with a rounded teaspoon of apricot jam.
