Ingredients (16)

chicken
12.00 chicken — drumsticks
10.00 ml cayenne pepper
2.00 ml turmeric
5.00 ml cumin — seeds
7.00 ml salt
2.00 ml freshly ground black pepper
2.00 garlic — cloves, crushed
2.00 ml fresh ginger — crushed
125.00 ml yoghurt — natural
250.00 ml water
COATING
3.00 eggs — extra-large, seperated
salt
freshly ground black pepper
breadcrumbs — dried
oil — for frying

Method:

Wash the drumsticks well and remove the skin. Arrange in a large saucepan. Combine the remaining ingredients and pour over the drumsticks. Bring to the boil and simmer until the meat is tender but not falling off the bone. Cool. To make the coating, beat the egg whites until stiff and then add the yolks. Season to taste with salt and pepper and beat until just mixed. Pat each drumstick dry and dip in the egg mixture. Shake off the excess egg and roll in the breadcrumbs. Heat sufficient oil in a pan and fry the drumsticks until golden brown. Serve with potatoes, vegetables and a salad.
Serves 6-8.
