    chicken drumsticks
  • 10
    ml
    cayenne pepper
  • 2
    ml
    turmeric
  • 5
    ml
    cumin seed (jeera)
  • 7

    salt
  • 2
    ml
    pepper
  • 2
    cloves garlic, crushed
  • 2
    ml
    fresh ginger, crushed
  • 125
    ml
    natural yoghurt
  • 250
    ml
    water
  • COATING
  • 3
    extra-large eggs, separated
  • salt
  • pepper
  • dried breadcrumbs
  • oil for frying
 

Method

 
Wash the drumsticks well and remove the skin. Arrange in a large saucepan. Combine the remaining ingredients and pour over the drumsticks. Bring to the boil and simmer until the meat is tender but not falling off the bone. Cool. To make the coating, beat the egg whites until stiff and then add the yolks. Season to taste with salt and pepper and beat until just mixed. Pat each drumstick dry and dip in the egg mixture. Shake off the excess egg and roll in the breadcrumbs. Heat sufficient oil in a pan and fry the drumsticks until golden brown. Serve with potatoes, vegetables and a salad. Serves 6-8.
