    cake flour
  • 15
    ml
    baking powder
  • 2
    ml
    salt
  • 50
    g
    butter
  • 1
    large egg
  • 125
    ml
    milk
  • 25
    ml
    sugar
 

Method

10-12 min
 
Preheat oven to 220 ºC. Sift dry ingredients (expect sugar) together. Rub in butter with your fingertips. Beat egg, milk and sugar together and cut into dry ingredients using a blunt knife or spatula. Mix until ingredients are just mixed. Don't overmanipulate the dough. Turn out on to a floured surface and pat or roll out gently to 2 cm thick. Cut into squares or triangles or cut out using a scone cutter. Place on a greased baking tray, leaving a 2-cm space between the scones. Bake in the oven for 10-12 minutes. Serve with jam and cream. Makes 15.
