Tea fruitcake

    g
    mixed dried fruit, large pieces chopped smaller
  • 100
    g
    glacé cherries
  • 500
    ml
    weak tea, cooled
  • 2
    extra-large eggs, beaten
  • 200
    g
    yellow sugar
  • 500
    g
    self-raising flour
  • 2
    ml
    salt
  • 5
    ml
    mixed spice
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a 23 cm ring tin with margarine. Soak dried fruit overnight in tea. Do not drain. Beat the eggs and the yellow sugar until light and thick. Sift the dry ingredients and fold into the egg mixture together with the soaked fruit and remaining tea. Spoon into the prepared tin. Bake for 40-60 minutes or until a testing skewer comes out clean. Turn out on to a wire rack and allow to cool. Butter the slices of cake before serving. Makes a medium cake.
