480.00 g flour — cake
salt — pinch
250.00 g butter
375.00 ml castor sugar
5.00 ml Bicarbonate of soda
90.00 ml milk
5.00 ml vanilla — essence

Method:

Preheat the oven to 180 ºC and butter a few baking sheets or spray with non-stick spray.
Sift the cake flour and salt together in a large mixing bowl.
Rub in the butter with your fingertips until the mixture resembles coarse breadcrumbs.
Mix the castor sugar and bicarbonate of soda in a saucepan. Add the milk and heat slowly until the mixture forms a white froth. Do not bring to the boil.
Remove from the heat and add the vanilla essence. Cool slightly.
Add to the flour mixture and mix to form a dough.
Roll into balls and flatten slightly with a fork or use a cookie cutter.
Cool the cookies in the fridge for about 30 minutes before baking for 10 minutes until golden brown and done.
