    legs of turkey
  • 60
    ml
    chutney
  • 175
    ml
    olive oil
  • 5
    ml
    Tabasco sauce
  • 5
    ml
    soy sauce
  • 175
    ml
    red wine
  • 10
    ml
    Worcestershire sauce
  • 5
    ml
    mustard
  • 5
    ml
    sugar
  • 4
    cloves
  • salt and freshly ground pepper
  • 175
    g
    dried apricots, chopped
  • 300
    g
    white rice
 

Method

 
1. Place the turkey legs in a bowl and mix all the ingredients together except the apricots and rice. Pour the marinade over. Leave for 6 to 7 hours. Turn pieces every hour to ensure they are well coated. 2. Boil the apricots in 250 ml water until they are tender. Set aside. 3. Place turkey pieces and marinade in a roasting pan. Cook in a preheated oven at 180 ºC for 1 hour. Turn pieces every 20 minutes to ensure they are cooked throughout. 4. Boil rice until tender, drain and stir in chopped apricots. 5. Arrange turkey legs on the rice and pour over the sauce.
