Tasty sausage casserole

    orange or red pepper, seeded and sliced into strips

    green pepper, sliced into strips

    pork sausages

    chopped tomatoes

    tomato purée
  • 150
    ml
    sparkling apple juice

    cornflour
  • 30

    chopped fresh sage
  • salt and freshly ground black pepper
 

Method

Preheat the oven to 190 ºC and spray a medium-sized casserole dish with non-stick spray or grease it. Heat the oil in a pan and sauté the onion and garlic until glossy. Add the peppers and leeks and stir-fry until tender. Transfer to the casserole dish. Fry the sausages in the pan until golden brown all over. Transfer to the casserole dish and add the tomatoes, tomato purée and juice. Cover and bake for 30 minutes. Mix the cornflour with a little cold water to form a paste and add to the sausages along with the sage about 15 minutes before the end of the baking time. Season with salt and pepper to taste. Mix well and bake until the gravy has thickened slightly. Serve with buttered noodles. Serves 4.
