1.00	onion — thinly sliced
250.00 g	bacon — streak, rindless
2.00	garlic — cloves, crushed
400.00 g	potatoes — boiled, sliced

45.00 g	parmesan cheese — grated

90.00 g	rocket

Method:

Heat oil in a large frying pan.
Saut&eacute the onion for one minute.
Add the bacon and fry for five minutes.
Add the garlic and fry for another three minutes.
Add the potato slices.
Crumble the feta cheese and add it, together with the Parmesan, to the saucepan.
Beat the eggs, pour into the pan and stir in the rocket.
Cook for about five minutes, then grill until golden.
Serve with a salad and crusty bread.
