    kg
    rolled pork joint
  • 5
    ml
    dried sage
  • 10
    ml
    olive oil
  • 15
    ml
    coarse salt
  • 2
    apples, cored and quartered
 

Method

1 hour 40 min
 
Preheat oven to 190 ºC. Pierce underside of scored pork joint several times. Sprinkle sage over the meat. Put the pork into a roasting tin, rub scored fat with olive oil and salt and roast for 30 minutes per 450 g, plus 30 minutes extra. Add apples 20 minutes before pork is finished roasting. Serves 4-6.
