Tasty potato slices with chilli sauce

Ingredients (14)

potatoes
500.00 g potatoes — scrubbed
30.00 ml fresh chillies — 573
2.00 garlic — large cloves, crushed
15.00 ml paprika
15.00 ml coriander — ground
salt — pinch
black pepper — freshly ground
chilli sauce
400.00 g tomatoes — whole, peeled
1.00 red chilli — deseeded and finely chopped
15.00 ml vinegar — red wine
30.00 ml fresh coriander
sour cream — or yoghurt

Method:

Preheat the oven to 200 ºC (400 ºF).
Halve the potatoes lengthwise and cut each half into 2-4 wedges, depending on the size of the potato. Boil in salted water until nearly soft. Drain well and set aside.
Mix the olive oil, garlic and seasonings and pour into an oven pan.
Place in the oven for 1-2 minutes. Arrange the potato slices in the oven pan and mix with the oil mixture, ensuring the potatoes are completely covered.
Bake for 20-25 minutes or until the potatoes are cooked, crisp and browned.
Mix all the ingredients for the chilli sauce in a saucepan and simmer for 15 minutes or until the sauce is no longer watery.
Serve with the potatoes and dollops of sour cream or plain yoghurt, if desired.
Serves 4.
