Tasty potato slices with chilli sauce

    g
    potatoes, scrubbed

    olive oil

    large cloves garlic, crushed

    paprika
  • 15

    ground coriander
  • pinch salt
  • freshly ground black pepper
  • CHILLI SAUCE
  • 400
    g
    whole, peeled tomatoes
  • 1
    red chilli, seeded and finely chopped
  • 15
    ml
    red wine vinegar
  • 30
    ml
    fresh coriander leaves
  • sour cream or yoghurt for serving
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Halve the potatoes lengthwise and cut each half into 2-4 wedges, depending on the size of the potato. Boil in salted water until nearly soft. Drain well and set aside. Mix the olive oil, garlic and seasonings and pour into an oven pan. Place in the oven for 1-2 minutes. Arrange the potato slices in the oven pan and mix with the oil mixture, ensuring the potatoes are completely covered. Bake for 20-25 minutes or until the potatoes are cooked, crisp and browned. Mix all the ingredients for the chilli sauce in a saucepan and simmer for 15 minutes or until the sauce is no longer watery. Serve with the potatoes and dollops of sour cream or plain yoghurt, if desired. Serves 4.
