Ingredients (13)

30.00 ml fresh chillies — 573
800.00 g pork strips
1.00 onion — thinly sliced
2.00 garlic — cloves, crushed
3.00 carrots — strips
125.00 g button mushrooms — sliced
4.00 courgettes — sliced
15.00 ml soy sauce
10.00 ml sherry
5.00 ml brown sugar — soft
15.00 ml cornflour — mixed with water
salt and freshly ground black pepper — to taste
500.00 ml brown rice — cooked

Method:

Heat the oil in a large pan and brown the pork strips. Remove from the pan. Sauté the onion and garlic until soft, return the pork strips to the pan and add the carrots, mushrooms and courgettes. Sauté for 5-7 minutes over moderate heat until just done. Add a little boiling water if the pan becomes too dry. Mix the soy sauce, sherry, brown sugar and cornflour paste and add. Stir until the sauce thickens slightly and is cooked through. Add the rice if desired. Stir-fry until heated through and serve with rolls or pita bread.
Serves 4-6.
