Tasty meat loaf

  • 250 g rindless streaky bacon
  • 2
    onions, chopped
  • 250 g portabellini or button mushrooms, sliced
  • 1 large egg, lightly beaten
  • 5 ml lemon zest, grated
  • 15 ml Worcestershire sauce
  • 2 slices bread, made into breadcrumbs
  • 400 g lean beef mince
  • 5 ml dried thyme
  • 25 ml sunflower oil
  • flour for dusting
  • 15 ml butter
  • 250 ml crème fraîche
  • salt and black pepper

Chop half the bacon and fry over a medium heat for two minutes. Add half the onion and fry for a minute.
Chop a third of the mushrooms, add to the bacon mixture and fry for a minute.
Remove from the heat and allow to cool.
Mix the egg, lemon zest and Worcestershire sauce together.
Add the breadcrumbs, then add to the mince.
Add the bacon and mushroom mixture and mix well.
Season to taste with thyme, salt and peper. Mix well.
Heat the oil in a frying pan.
Shape the mixture into two rolls.
Dust with flour. Place in the pan and brown.
If the pan is not big enough, fry one at a time.
Remove from the pan and transfer to a roasting pan.
Place the remaining strips of bacon over the loaves.
Bake in a preheated 180 °C oven for 30 minutes, or until cooked through.
To make the sauce, heat 15 ml butter in a saucepan. Add the remaining mushrooms and fry over a medium heat until soft.
Reduce the heat to low and stir in the crème fraîche.
Season to taste with salt and plenty of black pepper.
Remove from the heat and spoon over the sliced meat loaf.
