Tasty lamb chops

    lamb chops, trimmed

    oil

    basmati rice, cooked
  • 15

    peanut oil
  • 30

    chopped walnuts
  • 45

    freshly chopped thyme
  • MARINADE
  • 4
    cloves garlic, freshly chopped
  • 30
    ml
    freshly chopped thyme
  • 15
    ml
    peanut oil
  • 45
    ml
    olive oil
  • 15
    ml
    ground cumin
  • 2.50
    ml
    ground coriander

Make the marinade by mixing the garlic, thyme, oils, 5 ml cumin and coriander in a shallow dish.Add chops, toss to coat well, cover and marinate for at least 30 minutes.
Heat 30 ml oil in a non-stick frying pan and sauté chops in batches over high heat for four to five minutes, or until done.
Heat the peanut oil in a saucepan and add the remaining cumin.
Stir for 30 seconds, then add the chopped walnuts.
Fry for one minute and drain on kitchen paper.
Mix the cooked rice, walnuts and thyme together.
Serve lamb chops with prepared rice and seasonal vegetables.
