    beef stock
  • 90

    soy sauce
  • 90
    ml
    lemon juice
  • 60
    ml
    honey
  • 15
    ml
    white grape vinegar

    ground ginger
  • 10
    ml
    ground cumin (jeera)
  • KEBABS
  • 800
    g
    cubed leg of mutton
  • 200
    g
    stoned prunes
  • 24
    dried peaches
  • 2
    green peppers, seeded and cut into large squares
 

Method

 
Turn on the oven grill. Blend all ingredients for the marinade. Thread about 8 kebab skewers with the cubed mutton, prunes, peaches and green pepper squares and arrange in a large oven dish. Pour over the marinade and leave for 2-3 hours. Arrange the kebabs on the rack of the oven roasting tin and place under the grill. Grill for about 15-20 minutes until the meat is done, but not dried out. Baste regularly with the marinade, turning the kebabs once or twice during the cooking period. Alternatively, grill the kebabs over a medium hot fire. Serve with almond rice. Makes 8 kebabs.
