  • butter and oil for frying
  • 750
    g
    butternut, peeled and cubed
  • 1
    onion, chopped
  • 2
    each, potatoes and carrots, grated
  • ground ginger and cinnamon to taste
  • 1
    Litres
    chicken stock
  • 500
    ml
    milk
  • 5
    ml
    honey
  • 2
    ml
    paprika
  • salt and pepper
 

Method

 
Heat butter and olive oil in a saucepan, add butternut cubes, onion, potatoes and carrots. Season with ground ginger and ground cinnamon. Sauté for 5 minutes and add chicken stock, milk, honey, paprika, salt and pepper. Simmer until the vegetables are tender, purée and serve.
