Ingredients (10)

4.00 fish — fillets
30.00 ml lemon juice
sea salt and freshly ground black pepper
1.00 onion — finely chopped
1.00 green pepper — deseeded and diced
oil
3.00 tomatoes — peeled and finely chopped
15.00 ml fresh parsley — finely chopped
sugar — pinch
125.00 ml cheddar cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Spray an ovenproof dish with non-stick spray.
Arrange the fillets in the oven dish. Pour over the lemon juice and season with salt and pepper to taste.
Sauté the onion and green pepper in a little oil until soft. Add the tomato and parsley, mix and season with salt, pepper and a pinch of sugar. Spoon over the fish and sprinkle with cheese. Cover with aluminium foil and bake for 30 minutes or until the fish is done and flakes easily with a fork.
Serve with slices of lemon and potato chips if desired.
Serves 3-4.
