Tasty curried vegetables

    baby potatoes
  • 500

    carrots, scraped clean and cut into pieces
  • 1
    large cauliflower, broken into florets
  • 250
    g
    green beans, topped and tailed
  • 1
    large onion, finely chopped
  • 2
    cloves
    garlic, crushed
  • 1
    piece
    whole ginger, crushed
  • 30
    ml
    curry powder, medium
  • 10
    ml
    turmeric
  • 500
    g
    courgettes, rinsed and cut into pieces
 

Method

 
Boil the potatoes in salted water until tender. Drain and set aside. Boil carrots, followed by the cauliflower and finally add the green beans. Boil until tender but still crisp. Drain well and set aside. Sauté the onion and garlic in a little oil until soft. Add all the seasonings and stir-fry with courgettes for another few minutes. Add the boiled vegetables to the pan and stir-fry for a few minutes until all the flavours are well blended and the dish is heated through. Remove the piece of ginger before serving. Serves 6
