Ingredients (10)

1.00 kg baby potatoes
500.00 g carrots — scraped and chopped
1.00 cauliflower — large, cut into florets
250.00 g green beans — topped and tailed
1.00 onion — finely chopped
2.00 cloves garlic — cloves, crushed
1.00 piece fresh ginger — crushed
30.00 ml curry powder — medium
10.00 ml turmeric
500.00 g courgettes — chopped

Method:

Boil the potatoes in salted water until tender. Drain and set aside. Boil carrots, followed by the cauliflower and finally add the green beans. Boil until tender but still crisp. Drain well and set aside. Sauté the onion and garlic in a little oil until soft. Add all the seasonings and stir-fry with courgettes for another few minutes. Add the boiled vegetables to the pan and stir-fry for a few minutes until all the flavours are well blended and the dish is heated through. Remove the piece of ginger before serving.
