Tasty cheese and onion frittata

    olive oil
  • 2
    onions, sliced
  • 3
    courgettes, grated
  • 1
    red pepper, sliced into julienne strips
  • 200

    cheese and onion viennas, sliced
  • 6
    large eggs, lightly beaten
  • 100
    ml
    milk
  • 6
    baby potatoes, cooked and halved
  • salt and freshly ground black pepper
  • 20
    ml
    chopped fresh chives
  • 50
    ml
    feta cheese, crumbled
 

Method

Heat the oil in a 26 cm heavy-based frying pan. Sauté the onions until soft. Add the grated courgettes and red pepper and cook for 2 minutes. Add the viennas. Mix the eggs, milk, potatoes and seasoning together and pour over the ingredients in the pan. Sprinkle with chives and feta cheese and cook over low heat for about 6 minutes, or until almost set. Place under a hot grill for 2-3 minutes, until top is set and golden. Slice into wedges and serve hot or cold. Serves 4-6.
