250.00 ml tapioca
2.00 Litres milk
1.00 ml salt
2.00 cinnamon — sticks
310.00 ml sugar
4.00 eggs — large
butter

Method:

Soak the tapioca in 1 litre milk overnight. The next morning add the salt and cinnamon and cook slowly until the tapioca is soft and transparent (a double boiler is ideal for this, but the tapioca can also be cooked in the microwave). Add some of the remaining milk if necessary. Stir the mixture occasionally while cooking. Remove from the heat when cooked, add the rest of the milk and the sugar, stirring until the sugar has dissolved. Leave to cool until lukewarm. Beat the eggs and stir into the tapioca mixture. Pour into a greased ovenproof dish, dot with butter, if desired, and bake for about 1 hour, or until set, in a preheated oven at 180 ºC. Serve hot or lukewarm. Serves 6.
