Ingredients (10)

45.00 ml butter
1.00 onion — chopped
1.00 green pepper — chopped
5.00 ml curry powder
2.00 tomatoes — chopped
410.00 g red kidney beans
400.00 ml coconut milk
250.00 ml water
200.00 ml rice — cooked
40.00 ml desiccated coconut

Method:

1. Heat the butter in a large saucepan. Sauté onion, green pepper and curry powder for two minutes.
2. Add tomatoes, beans, coconut milk and water and simmer gently for 10 minutes.
3. Add cooked rice and simmer for two minutes.
4. Season to taste and serve sprinkled with desiccated coconut.
