Tanzanian coconut bean soup

    green pepper, chopped

    curry powder

    tomatoes, chopped

    kidney beans
  • 400
    ml
    coconut milk
  • 250
    ml
    water
  • 200
    ml
    cooked rice
  • 40
    ml
    desiccated coconut
 

Method

15 minutes
 
1. Heat the butter in a large saucepan. Sauté onion, green pepper and curry powder for two minutes. 2. Add tomatoes, beans, coconut milk and water and simmer gently for 10 minutes. 3. Add cooked rice and simmer for two minutes. 4. Season to taste and serve sprinkled with desiccated coconut.
