Tangy chicken pasta

Ingredients

  • 500
    g
    spaghetti
  • 45
    ml
    seasoned flour
  • 5
    ml
    ground ginger
  • 5
    ml
    grated lemon zest
  • 4
    chicken breast fillets, thinly sliced
  • 45
    ml
    oil
  • 250
    g
    button mushrooms, sliced
  • 1
    red pepper, sliced
 

Method

Cook the pasta according to pack instructions.
Mix the flour, ginger and lemon zest in a bowl.
Add chicken breast slices, and toss to coat well.
Heat oil in a large frying pan or wok.
Add the chicken and stir-fry in batches, for five to six minutes, until just cooked through.
Remove from the pan and set aside/
Add mushrooms and red pepper to the pan and fry for one minute.
Add the chicken and pasta and mix well.
Season to taste and serve with a green salad.
