Tandoori chicken

    onion, sliced into rings

    natural yoghurt

    freshly grated ginger

Drizzle the lemon juice over the chicken portions, scatter onion rings over and allow to stand for 10 minutes. Mix the yoghurt, ginger, garlic and tandoori spice together. Pour over chicken, making sure it's well coated. Marinate for at least half an hour, then grill over medium-hot coals on the braai for about 20 minutes (or bake at 200 ºC for 20-25 minutes) until cooked through. Serves 4. TANDOORI SPICE Place the following ingredients in a spice blender or coffee grinder: 20 ml cumin seeds, 15 ml dried crushed chillies, seeds from 8 cardamom pods, 4 cloves, 3 ml ground turmeric, 1 stick cinnamon, 5 ml aniseed, 2 bay leaves and 2 ml salt. Grind together until fine. Store in an airtight container.
