Tagliatelle carbonara

Ingredients

  • 125
    ml
    cream
  • 6
    jumbo egg yolks
  • 100
    g
    parmesan cheese, grated
  • salt and milled pepper
  • 30
    ml
    olive oil
  • 350
    g
    streaky bacon, cut into strips
  • 4
    garlic cloves, crushed
  • 500
    g
    tagliatelle, cooked al dente and kept very hot
 

Method

Beat cream and egg yolks in a bowl.
Add parmesan cheese and season with salt and pepper.
Heat oil in a saucepan and fry bacon and garlic until bacon is crisp.
Drain.
Toss hot pasta into sauce, add bacon mixture and serve hot.

Serve with a salad.
