    vegetable oil

    cloves garlic - finely chopped

    onion - sliced
  • 1/2
    green peppers - chopped
  • 1
    cup
    carrot - grated
  • 1

    ground cumin
  • 1
    tsp
    crushed chilli

    extra-lean beef mince
  • 60
    ml
    tomato sauce
  • 80
    ml
    beef stock
  • 1
    pinch salt and milled pepper
  • for serving:
  • 2
    tomatoes - diced
  • 1
    cup
    iceberg lettuce - shredded
  • 125
    ml
    mozzarella cheese - grated
  • 1
    small baguette - sliced and toasted
 

Method

Heat oil in a frying pan. Add garlic, onion and pepper and cook for 2 minutes.

Toss in carrot and spices and cook for a further 2 - 3 minutes.

Add mince and cook until well browned. Add tomato sauce and stock. Cook for 3 - 4 minutes and season.

Serve mince, tomatoes, lettuce and cheese in bowls and allow guests to help themselves.
