    ml
    finely ground bulgar (cracked wheat)
  • 125
    ml
    parsley, finely chopped
  • 125
    ml
    mint leaves, finely chopped
  • 2
    firm tomatoes, peeled and diced
  • 4
    spring onions, finely chopped
  • salt and pepper to taste
  • 5
    ml
    soemak (Arabic spice)
  • 45
    ml
    olive oil
  • 45
    ml
    lemon juice
 

Method

 
Soak the bulgar in water for 2 - 3 hours and drain well.
Mix parsley and mint with the tomatoes and spring onions.
Mix remaining ingredients. Pour over salad and toss well and serve the salad as an appetiser or snack.
