Tabbouleh salad

Ingredients

  • 250
    ml
    bulgar or cracked wheat
  • 125
    ml
    fresh parsley, chopped
  • 125
    ml
    spring onions, finely sliced
  • 65
    ml
    fresh mint, chopped
  • 40
    ml
    olive oil
  • 45
    ml
    lemon juice
  • 1
    cucumber, seeded and thickly sliced
  • 4
    small tomatoes, seeded and sliced
  • sprigs of mint, to garnish
 

Method

 
Soak bulgar wheat for 10 minutes, then drain. Combine wheat with parsley, spring onions and chopped mint. Mix olive oil and lemon juice and fold into wheat. Season. Arrange on platter, surrounded by cucumber and tomato, and garnish with mint. Serves 4.
