Ingredients (9)

250.00 ml bulgar wheat
125.00 ml fresh parsley — chopped
125.00 ml spring onions — finely sliced
65.00 ml fresh mint — chopped
40.00 ml fresh chillies — 573
45.00 ml lemon juice
1.00 cucumber — deseeded, sliced
4.00 tomatoes — deseeded, sliced
fresh mint — to garnish

Method:

Soak bulgar wheat for 10 minutes, then drain. Combine wheat with parsley, spring onions and chopped mint. Mix olive oil and lemon juice and fold into wheat. Season.
Arrange on platter, surrounded by cucumber and tomato, and garnish with mint. Serves 4.
