T-bone steak with creamy green peppercorn sauce

  • 2
    T-bone steaks, each 2,5 cm thick
  • coarsely ground black pepper
  • oil
  • butter, salt and lemon juice
  • 125
    ml
    cream
  • 15
    ml
    brandy
  • 10
    ml
    green peppercorns
 

Method

 
Brush a ribbed cast-iron pan with oil and heat until smoking hot. Season the steaks to taste with black pepper and pan-grill for a total of 5-7 minutes for rare and 7-10 minutes for medium. Season with a knob of butter, salt and lemon juice. Transfer to warmed plates. Meanwhile, pour the cream and brandy into a pan and simmer until slightly thickened. Add the peppercorns, stir and season with salt Serve the steaks immediately with the sauce and potato chips. Serves 2.
