Ingredients (7)

250.00 ml brown sugar
250.00 ml water
1.00 vanilla — pod
3.00 oranges
125.00 g cottage cheese — creamed
60.00 ml castor sugar
4.00 cake — slices, Madeira

Method:

Heat the brown sugar, water and vanilla over low heat until the sugar has melted.
Bring to the boil and simmer for about 10 minutes or until syrupy.
Peel and slice the oranges, then pour the hot syrup over them and allow to stand for 10 minutes.
Lightly mix the cottage cheese and castor sugar.
Arrange a slice of Madeira cake on each plate and top with a couple of orange slices.
Smother in the syrup and serve with a scoop of the cottage cheese mixture.
