Ingredients (7)

2 cup flour
2 tsp butter — soft
2 tsp Baking powder
1/3 tsp salt
1 eggs — beaten with water
SYRUP:
8 cup white sugar
5 cup water

Method:

For the syrup:

Boil together the sugar and water for 15 minutes. You can add optional flavouring like cinnamon, orange or lemon rind.

Place syrup in freezer overnight.

Pastry:

Pulse all ingredients together lightly to form a soft dough.

Place in the fridge overnight.
Roll dough out about 1 cm thick, cut into rectangles 8 x 3 cm. Cut each rectangle lengthwise into 3 x 1 cm strips leaving joined at one end and plait.

Fry in hot oil till golden and plunge immediately into ice cold syrup (this is the secret) holding them under until they go dark and translucent as they suck in the syrup.

Drain and allow to cool on a rack and then refrigerate without covering or freeze.
