Sweetly refreshing mango sorbet

No ice-cream maker required!

Preparation time: 15 min _ chilling time


  • 500
    fresh, ripe mango flesh, puréed
  • ½–¾ cup castor sugar (depending on how sweet the fruit is)
  • 1
    egg white
  • a few drops of fresh lemon juice (optional)



Place the mango, sugar and egg white in a bowl and beat for 10 minutes.

Taste, then add the lemon juice if using, and beat.

Tip the mixture into a pre-chilled plastic container, smooth over the surface and replace the lid.
Freeze overnight or until frozen.
