Sweetcorn mealie meal pie with cheese

    hot milk
  • 60

    soft breadcrumbs
  • 50

    butter
  • salt and pepper to taste
  • 5
    ml
    mustard powder
  • pinch cayenne pepper
  • 410

    cream-style sweetcorn
  • 100

    Cheddar cheese, grated
  • 3
    extra-large eggs, separated
 

Method

40-60 min
 
Preheat the oven to 180 ºC (350 ºF). Spray a 24 cm ovenproof dish with non-stick spray. Pour the hot milk over the breadcrumbs. Add the butter and season with salt, pepper, mustard powder and cayenne pepper. Add the sweetcorn and cheese and mix. Add the egg yolks. Beat the egg whites till soft peaks are formed and fold into the mixture. Pour into the prepared oven dish, place in a larger ovenproof dish half filled with boiling water and bake for 40 to 60 minutes or till the mixture has set and is slightly brown on top. Serve immediately with a salad. Serves 4.
