Sweetcorn crumpets with sweet chilli sauce

  • SWEETCORN CRUMPETS
  • 1
    x 410 g can cream-style sweetcorn
  • 1
    egg
  • 250
    ml
    cake flour
  • salt, pepper and cayenne pepper
  • oil for shallow-frying
  • SWEET CHILLI SAUCE
  • 3
    large red chillies, finely chopped
  • 1
    garlic clove, finely chopped
  • 250
    ml
    white vinegar
  • 10
    ml
    salt
  • 230
    ml
    sugar
 

Method

SWEETCORN CRUMPETS
Mix all the ingredients except the oil.
Heat enough oil in a heavy-based pan for shallow-frying.
Drop tablespoonfuls of the mixture into the hot oil and fry on one side until air bubbles begin to form.
Turn the crumpets and fry on the other side until brown.
SWEET CHILLI SAUCE
Pour all the ingredients into a saucepan and stir over low heat until the sugar has dissolved.
Boil rapidly for five minutes or until the sauce is slightly syrupy. Leave to cool.
