Sweetcorn bake

    vienna sausages, cut into thirds

    extra-large eggs, separated

    cream-style sweetcorn
  • 1
    large green pepper, seeded and diced
  • pinch salt and cayenne pepper
  • 190
    self-raising flour
  • milk if necessary


Preheat the oven to 180 ºC and spray a deep 23 cm pie dish with non-stick spray. Arrange the sausages in the bottom of the pie dish. Beat the egg yolks and add the sweetcorn and diced green pepper. Mix and season generously. Sift in the self-raising flour and stir into the sweetcorn mixture. Add a little milk if the mixture is too stiff. Beat the egg whites until stiff and fold into the mixture with a metal spoon. Spoon the mixture on top of the sausages, spreading it evenly. Bake for 20-25 minutes until cooked and set. Serve hot or cold. Serves 6.
