Sweet roasted butternut

  • 1
    butternut
  • 30
    ml
    honey
  • 30
    ml
    brown sugar
  • 125
    ml
    orange concentrate
  • 2
    ml
    ground cinnamon
  • couscous to serve
 

Method

 
Peel and slice butternut into wedges and steam. Mix honey, brown sugar, orange concentrate and ground cinnamon and pour over. Oven-roast at 190 ºC until tender. Serve on couscous to which sautéed onions, orange zest, a pinch of cumin, raisins and toasted almonds have been added.
