Sweet potatoes with raisins

    light brown sugar

    orange juice
  • 1

    salt

    seedless raisins
  • 30

    soft butter
  • 25
    ml
    cornflour
  • 25
    ml
    cold water
  • 45
    ml
    sherry
 

Method

 
Preheat the oven to 180 ºC. Butter an ovenproof dish or spray with non-stick spray. Boil the sweet potatoes in their jackets until just done but still firm. Cut each sweet potato into 4 wedges and arrange in the prepared dish. Heat the brown sugar, orange juice, salt, raisins and butter over low heat until the sugar has dissolved. Bring to the boil and simmer for about 2 minutes. Blend the cornflour with cold water to form a smooth paste and stir into the sauce. Bring to the boil once more and simmer until cooked. Remove from the heat and add the sherry. Stir through and spoon the sauce over the sweet potato wedges. Bake for about 20 minutes until the sweet potatoes are tender. Serve hot. Serves 4-5.
