Sweet potatoes with goat's milk cheese

Serve this delicious vegetarian dish with thyme browned butter.

    sweet potatoes

    sprigs thyme, leaves removed
  • 200
    cream cheese or chevin
Servings: Change Serving


Preheat the oven to 230ºC.

Place the sweet potatoes on a baking sheet and bake for 40 minutes to one hour or until cooked through.
Remove the potatoes from the oven. Place the butter in a small pot and heat over a medium heat, swirling occasionally, until the white solids in the butter start turning golden brown. Add the thyme leaves to the saucepan and remove from the heat.
Cut a slit in the top of each sweet potato, fill with cream cheese, pour over the browned butter and serve.

Cook’s notes:
If you can find them, use sweet potatoes with orange flesh – they are sweeter and look great.
