2.00 sweet potatoes — large
25.00 g butter
200.00 g bacon — streaky, chopped
1.00 onion — medium, chopped
1.00 garlic — cloves, crushed
30.00 ml orange juice
5.00 ml orange — zest only
5.00 ml paprika
100.00 g mature cheddar cheese — grated
30.00 ml breadcrumbs — fresh
30.00 ml fresh parsley — chopped

Method:

Bake the potatoes for 45 minutes, or until tender. Cut in half lengthways and scoop the flesh into a bowl, retaining the skins. Mash the insides until smooth. Heat the butter and fry the bacon until crisp. Add to the potatoes. Fry the onion and garlic in the bacon fat until soft and add to the potato mixture. Stir in the orange juice and rind, paprika and cheese. Pile the filling into the potato skins and top with a mixture of the breadcrumbs and parsley. Bake in preheated oven for 15-20 minutes until golden brown.
Oven temperature: 200 ºC
