Sweet potatoes with apples and baby onions

Ingredients (9)

30.00 ml butter
3.00 apples — cored
4.00 sweet potato — peeled and diagonally sliced into thick pieces
6.00 baby onions — peeled and halved
65.00 ml vinegar — white wine
5.00 ml honey
salt
black pepper — freshly ground
6.00 fresh thyme — roughly torn

Method:

Melt butter in a large frying pan over medium-high heat. Add apples (cut into 8 wedges each) and cook, turning occasionally, for 2-3 minutes or until browned. Transfer to a plate and set aside. Add sweet potatoes and onions to pan and toss to coat in pan juices. Reduce heat to low, cover and cook, turning occasionally, for 5 minutes or until sweet potatoes are cooked. Return apples to the pan with vinegar and honey. Simmer until liquid reduces by half. Season, sprinkle with thyme and serve immediately.
Serve with pork or veal dishes, or sausages, with creamy polenta. Serves 4 as a side dish.
