Sweet potato, vegetable and Camembert salad

    orange sweet potatoes, peeled and sliced

    courgettes, sliced lengthways
  • 1
    red pepper, quartered
  • 250

    patty pans
  • 250

    mangetouts
  • 2
    red onions, quartered
  • 30
    ml
    olive oil
  • 1
    round of Camembert cheese
  • Dressing
  • 5
    ml
    Dijon mustard
  • 1
    small clove garlic, crushed
  • 10
    ml
    lemon juice
  • 20
    ml
    malt vinegar
  • 50
    ml
    olive oil
  • 10
    ml
    brown sugar
 

Method

1. Steam the sweet potatoes until just tender. Place them on a braai grid along with the other vegetables. Drizzle with olive oil. Cook over medium-hot coals until the sweet potatoes are browned on both sides and the vegetables are tender but still crisp.
2. Place the Camembert on the braai grid for a few minutes for a smoky flavour.
3. Put the vegetables on a serving dish.
4. Dressing Whisk together all the dressing ingredients and drizzle over the vegetables. Cut the Camembert into wedges and arrange these on top of the vegetables. Serve immediately.
