Sweet potato corn chowder

Ingredients

  • 250
    g
    rindless streaky bacon, chopped (optional)
  • 1
    onion, chopped
  • 3
    leeks, split, well washed and sliced
  • 2
    ml
    dried thyme
  • 2
    ml
    dried marjoram
  • Salt and freshly ground black pepper
  • 1
    kg
    sweet potato, peeled and diced
  • 410
    g
    can whole kernel corn, drained
  • 750
    ml
    chicken stock
  • 300
    ml
    water
  • 125
    ml
    cream
 

Method

20 mins
 
Place bacon, onions and leeks in large casserole dish, microwave on 100% (High)power, 5 minutes, stirring frequently.

Add remaining ingredients, except cream, microwave on 100% (High) power, 12 to 15 minutes or until potatoes are tender.

Remove from oven, stir in cream.

Serve hot, with crusty garlic bread or wholewheat rolls.
