Ingredients (6)

500.00 g snoek — smoked, flaked
125.00 ml french dressing
3.00 sweet potatoes — medium, peeled and cubed
salt
1.00 lettuce — butter
125.00 ml spring onions — thinly sliced

Method:

1. Place the sweet potatoes in a mixing bowl and toss with just enough mustard dressing to coat. Season with sea salt. Arrange in a single layer in an oven pan. Bake in a preheated 200 ºC oven for about 30 minutes, until golden brown. Allow to cool.
2. Line a flat platter with butter lettuce. Top with a layer of smoked snoek, add the roasted sweet potatoes and spring onions. Top with a little more dressing. Garnish with dehydrated oriental seaweed, rehydrated in water (optional).
3. Serve with Cape-style wholewheat bread and well-ripened brie cheese if something more substantial is required. Fresh fruit rounds off this healthy meal.
